I hope your week is going well!

I am back sharing some more easy meals and recipes that I have been making and I think you will enjoy them too. I am also sharing some ideas for Cinco de mayo next week.

Since this month has lots going on from graduations, Cinco de Mayo and of course, preparing for Memorial Day coming up, there are lots of ideas.

Mexican Shredded Beef

This starts with an inexpensive chuck roast and then the most delicious barbacoa seasoning is added to the meat and slow-cooked in a Dutch oven.

Mexican Rice Drink

This Mexican drink is made with a combination of rice, nuts, cinnamon, sugar and the starchy milk leftover from soaking the rice. One of my favorites for warmer weather.

Dijon Baked Salmon In Cast Iron

I make salmon once a week this way. Cooking salmon in cast iron in the oven keeps the salmon filets really tender and it also makes for a quick meal that is ready in 15 minutes.

Creamy Chickpea Salad

We make this spicy chickpea salad almost every weekend and we are still not tired of it. The creamy dressing that covers the salad is so delicious and you can adjust it to make it more or less spicy depending on your taste.
