Hey there Reader

Happy Cinco de Mayo! I am celebrating with blender watermelon margaritas and blackened fish tacos. A casual dinner with the right theme :)

I am also excited for the arrival of some colorful dishes now that we are further into Spring. Fresh flavors and slightly lighter meals are just around the corner.

Right now, I have been rotating between very quick casual meals and when I have time, a nice meal and maybe even a quick bake.

Here are some of the things I have been making and I think you will love them too.



Peach Cobbler With Pie Crust

In my opinion, it is perfectly ok to make this even though it is not summer. The peaches bake up so juicy and this one is so easy.

Strawberry Galette

I make this often in Spring since strawberries are in season. If you have time, make a homemade pie crust to really take this one over the top.

Garlic Olive Oil Pasta

I make this one often and it is totally fine just serving this as dinner. If I have baby spinach or leafy greens laying around, I'll throw those in too. Fast and better than ordering out.

Gnocchi With Kale and Parmesan Cream

This is one of my favorite gnocchi dishes. The gnocchi is sautéed (not boiled) so it is so much lighter and the sauce is amazing.
